Lemon Blueberry Scones

For the Crust:

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cold unsalted butter, cubed
  • 1 cup fresh blueberries
  • 1 tbsp lemon zest
  • 2/3 cup heavy cream
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs.
  3. Gently fold in blueberries and lemon zest. In another bowl, whisk cream, egg, and vanilla. Stir into flour mixture until just combined.
  4. Turn dough onto a floured surface, knead gently 2-3 times, and pat into a 1-inch thick circle. Cut into 8 wedges.
  5. Place scones on prepared baking sheet. Bake for 18-20 minutes until golden. Cool slightly before serving.

Notes

You can customize the seasonings to taste.
