Lemon Blueberry Parfaits

A refreshing and light dessert featuring layers of lemon-flavored yogurt, fresh blueberries, and crunchy granola, perfect for a healthy treat or elegant dessert.

  • 2 cups fresh blueberries
  • 1 cup Greek yogurt (vanilla or plain)
  • 1/2 cup lemon curd
  • 1 cup granola
  • 1 tablespoon honey (optional)
  • 1 teaspoon lemon zest
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a small bowl, mix the Greek yogurt with lemon zest and honey until well combined.
  2. In serving glasses, start by adding a spoonful of lemon curd at the bottom.
  3. Add a layer of the lemon yogurt mixture over the lemon curd.
  4. Add a layer of fresh blueberries on top of the yogurt.
  5. Sprinkle a layer of granola over the blueberries.
  6. Repeat the layers until the glasses are filled, finishing with blueberries and a sprinkle of granola on top.
  7. Garnish with fresh mint leaves if desired.
  8. Serve immediately or chill for 30 minutes before serving for a cooler dessert.

Notes

For best texture, add granola just before serving to keep it crunchy. You can substitute lemon curd with lemon-flavored yogurt for a lighter version. Fresh lemon zest enhances the lemon flavor beautifully.
