Invisible Apple Cake
- 3 eggs, lightly beaten
- 2/3 cup milk, slightly warmed
- 3 tbsp butter, melted
- 1 tsp vanilla extract
- 1/2 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 tsp cinnamon
- 1 tsp baking powder
- 1/4 tsp salt
- 4 apples (about 2 lbs)
- Preheat oven to 350°F (177°C) and line a 9×5" loaf pan with parchment paper.
- Whisk eggs, milk, butter, and vanilla together in a large bowl.
- Add flour, powdered sugar, cinnamon, baking powder, and salt; mix until smooth.
- Peel, core, and slice apples very thin; toss slices into the batter to coat evenly.
- Transfer apples into loaf pan, pressing down gently to remove air pockets.
- Pour any remaining batter over the apples and spread evenly.
- Bake for 50–60 minutes or until golden and set.
- Cool in the pan for 10 minutes, then transfer to a wire rack for 15 minutes before slicing.
