Honey-Glazed Roasted Brussels Sprouts with Bacon

Halved Brussels sprouts roasted cut side down with bacon, glazed with honey near the end and finished with an optional splash of balsamic vinegar.

Ingredients

Scale
  • 1 lb Brussels sprouts, trimmed and halved
  • 4 strips bacon, chopped
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp balsamic vinegar (optional)
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste

Instructions

  1. Heat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the Brussels sprouts with the olive oil, garlic powder, salt and pepper.
  3. Spread the sprouts on the baking sheet, cut side down.
  4. Scatter the chopped bacon evenly over the sprouts.
  5. Roast for 20-25 minutes, turning them halfway through.
  6. During the last 5 minutes, drizzle the honey over the sprouts and bacon and stir gently to coat.
  7. Remove from the oven and drizzle with the balsamic vinegar, if using. Serve warm.

Notes

For extra crispness, broil for the last 2-3 minutes. A pinch of smoked paprika or cayenne adds a smoky or spicy note.
