Herb Butter Roast Turkey Breast Recipe

A bone-in turkey breast rubbed with herb butter under the skin, roasted until the skin is deep golden and the meat stays juicy all the way through.

Ingredients

Scale
  • 1 bone-in, skin-on turkey breast (6 - 7 lbs)
  • 1/2 cup unsalted butter, softened
  • 3 cloves garlic, minced
  • 2 tablespoons chopped fresh sage
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh rosemary
  • Zest of 1 lemon
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons kosher salt, plus more for seasoning
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth, for the pan

Instructions

  1. Let the turkey breast sit at room temperature for 30 minutes, then pat it completely dry with paper towels.
  2. Preheat the oven to 425°F and set a low rack inside a roasting pan.
  3. In a small bowl, mash the softened butter with the garlic, sage, thyme, rosemary, lemon zest, salt, and pepper until evenly combined.
  4. Starting at the thicker end of the breast, gently slide your fingers under the skin to loosen it from the meat without tearing it.
  5. Push about three-quarters of the herb butter directly under the skin, spreading it over the meat with your fingers. Rub the remaining butter over the outside of the skin, then rub the olive oil over that.
  6. Pour the chicken broth into the bottom of the roasting pan and set the turkey breast on the rack, skin side up.
  7. Roast at 425°F for 20-25 minutes, until the skin is starting to turn golden.
  8. Lower the oven temperature to 325°F and continue roasting for 50-70 minutes, until an instant read thermometer inserted into the thickest part of the breast (not touching bone) reads 160°F. Tent any spots that brown too quickly with foil.
  9. Transfer the turkey to a cutting board, tent loosely with foil, and rest for 15-20 minutes before carving. The internal temperature will climb to about 165°F as it rests.

Notes

If the thermometer reads higher than 160°F before the skin is fully golden, tent the pan loosely with foil for the last 10 minutes rather than raising the oven temperature. Save the pan drippings for gravy or for moistening leftovers later.
