Golden Baked Feta Rolls with Sweet Cranberry Honey

Crispy phyllo pastry rolls filled with creamy feta cheese, baked to golden perfection and served with a sweet-tart cranberry honey sauce for an irresistible sweet-salty balance.

  • 8 oz (225g) block of feta cheese
  • 8 sheets phyllo dough, thawed
  • 4 tbsp unsalted butter, melted
  • 1/4 cup fresh or dried cranberries, chopped
  • 1/4 cup honey
  • 1 tsp fresh thyme leaves (optional)
  • Black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Slice feta into 8 small blocks.
  2. Place one sheet of phyllo dough on a clean surface, brush with melted butter. Add a second sheet on top and brush again. Place a feta block at one end, sprinkle with chopped cranberries and thyme, then roll tightly into a log. Brush the outside with butter. Repeat with remaining sheets and feta.
  3. Place rolls seam-side down on a parchment-lined baking sheet. Bake for 15-20 minutes until golden and crispy.
  4. Meanwhile, warm honey in a small saucepan over low heat with any remaining cranberries until slightly thickened. Drizzle over baked rolls and serve warm.

Notes

For extra crispiness, brush each layer generously with butter. Use dried cranberries if fresh are unavailable. These rolls pair perfectly with a crisp white wine.
