Garlic Roasted Mushrooms

Simple, savory roasted mushrooms cooked with fresh garlic and herbs for a delicious side dish.

Ingredients

  • 16 ounces white button mushrooms, cleaned and halved
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh thyme, chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss mushrooms with olive oil, garlic, parsley, thyme, salt, and pepper until well coated.
  3. Spread the mushrooms on the prepared baking sheet in a single layer. Roast for 20–25 minutes, stirring once halfway through, until mushrooms are golden and tender.

Notes

For extra flavor, add a squeeze of lemon juice after roasting. Larger mushrooms may require more time; slice very large mushrooms for even cooking. These mushrooms are great as a side, on toast, or added to salads and grain bowls.
