Easy Hearty Soup Recipe for Cozy Nights

A warming, one-pot hearty soup recipe with tender beef, potatoes, and carrots simmered in a rich tomato-herb broth.

  • 2 tablespoons olive oil
  • 1.5 lbs beef stew meat, cut into 1-inch cubes
  • Salt and black pepper, to taste
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 medium potatoes, peeled and diced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 1 cup frozen green beans or peas
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large Dutch oven or heavy pot over medium-high heat. Season beef with salt and pepper, then brown on all sides in batches, about 6-8 minutes total. Remove and set aside.
  2. In the same pot, add onion, garlic, carrots, and celery. Sauté for 4-5 minutes until softened.
  3. Stir in tomato paste and cook for 1 minute until fragrant.
  4. Return the beef to the pot. Add diced tomatoes, beef broth, thyme, rosemary, and bay leaves. Stir to combine.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 1 hour, or until beef is tender.
  6. Add potatoes and continue simmering, covered, for 20 minutes until potatoes are fork-tender.
  7. Stir in frozen green beans or peas and cook for 5 more minutes.
  8. Remove bay leaves, taste and adjust seasoning with salt and pepper.
  9. Ladle into bowls, garnish with fresh parsley, and serve hot.

Notes

For extra richness, deglaze the pot with a splash of red wine after browning the beef. This soup tastes even better the next day, making it a great make-ahead meal. Swap beef for chicken thighs or a can of white beans for a lighter version.
