  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • Salt and black pepper, to taste
  • 1/2 teaspoon paprika
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup long-grain white rice, uncooked
  • 2 1/2 cups low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus extra for serving
  • 1 teaspoon Italian seasoning
  • 2 cups baby spinach
  • Fresh parsley, chopped, for garnish

Instructions

  1. Season the chicken pieces with salt, pepper, and paprika.
  2. Heat olive oil in a large, deep skillet over medium-high heat. Add the chicken and sear for 5-6 minutes until golden and cooked through. Remove and set aside.
  3. Lower the heat to medium and melt the butter in the same skillet. Add garlic and sauté for 30 seconds until fragrant.
  4. Stir in the rice and toast for 1 minute, coating it in the buttery garlic.
  5. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan, and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 15-18 minutes, until the rice is tender and the liquid is absorbed.
  7. Stir in the heavy cream, Parmesan cheese, and Italian seasoning. Cook for 2 minutes until creamy and well combined.
  8. Fold in the spinach and the cooked chicken; cook for 2 more minutes until the spinach wilts and everything is heated through.
  9. Garnish with fresh parsley and extra Parmesan, then serve hot.

Notes

Swap chicken thighs for boneless chicken breast if preferred, just watch the cook time so it doesn’t dry out. For a lighter version, replace the heavy cream with half-and-half. Leftovers keep well in an airtight container in the fridge for up to 3 days; reheat gently with a splash of broth to loosen the sauce.
