A comforting and creamy pasta dish featuring roasted butternut squash, savory sausage, and fresh spinach in a rich sauce.

- 1 lb Italian sausage, casings removed
- 1 lb butternut squash, peeled and cubed
- 8 oz pasta (penne or rigatoni)
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 small onion, diced
- 2 tbsp olive oil
- 1 tsp dried sage
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F. Toss butternut squash with 1 tbsp olive oil, salt, and pepper. Roast for 20-25 minutes until tender.
- Cook pasta according to package directions until al dente. Reserve 1/2 cup pasta water.
- In a large skillet, brown sausage over medium heat, breaking it up. Remove and set aside.
- In the same skillet, sauté onion and garlic until softened. Add roasted squash, cream, and sage. Simmer for 5 minutes.
- Mash squash slightly with a spoon. Stir in Parmesan until melted. Add cooked pasta, sausage, and spinach. Toss to combine, adding pasta water as needed for consistency.
