1 lb Italian sausage, casings removed
1 lb butternut squash, peeled and cubed
8 oz pasta (penne or rigatoni)
2 cups fresh spinach
1 cup heavy cream
1/2 cup grated Parmesan cheese
3 cloves garlic, minced
1 small onion, diced
2 tbsp olive oil
1 tsp dried sage
Salt and pepper to taste
Instructions
Preheat oven to 400°F. Toss butternut squash with 1 tbsp olive oil, salt, and pepper. Roast for 20-25 minutes until tender.
Cook pasta according to package directions until al dente. Reserve 1/2 cup pasta water.
In a large skillet, brown sausage over medium heat, breaking it up. Remove and set aside.
In the same skillet, sauté onion and garlic until softened. Add roasted squash, cream, and sage. Simmer for 5 minutes.
Mash squash slightly with a spoon. Stir in Parmesan until melted. Add cooked pasta, sausage, and spinach. Toss to combine, adding pasta water as needed for consistency.
