Soft Cinnamon Apple Fritters with Vanilla Glaze

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 large eggs
  • 3/4 cup milk
  • 2 cups diced apples
  • 1 teaspoon vanilla extract
  • Oil for frying
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  2. In another bowl, beat eggs and milk together. Stir in diced apples and vanilla extract.
  3. Combine wet and dry ingredients, mixing until just combined.
  4. Heat oil in a deep fryer or large pot to 375°F (190°C). Drop spoonfuls of batter into hot oil and fry until golden brown, about 2-3 minutes per side.
  5. Remove fritters from oil and drain on paper towels.
  6. For the glaze, mix powdered sugar, milk, and vanilla extract until smooth. Drizzle over warm fritters before serving.
