A rich and creamy chocolate chip cheesecake with a crunchy Oreo crust, topped with smooth chocolate ganache.

For the Crust:
- 24 Oreo cookies, crushed
- 4 tbsp unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup mini chocolate chips
- 1 cup heavy cream
- 1 cup semi-sweet chocolate chips
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Mix crushed Oreos with melted butter and press into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
- Fold in mini chocolate chips, then pour the mixture over the Oreo crust. Bake for 45-50 minutes or until the center is set.
- Let cheesecake cool completely, then refrigerate for at least 4 hours.
- For the ganache, heat heavy cream until just boiling. Pour over semi-sweet chocolate chips and stir until smooth. Let cool slightly, then spread over the cheesecake.
- Chill for another hour before serving.
