Chicken and Broccoli Stir Fry

Ingredients

  • 3 tbsp soy sauce (for sauce)
  • 1 cup chicken broth (divided)
  • 2 cloves garlic (finely chopped)
  • 2 tsp cornstarch (divided)
  • 2 tsp ginger (finely chopped)
  • 2 cups broccoli florets
  • 2 tsp sugar
  • 1 lb boneless chicken breast (cut into 1-inch pieces)
  • cooking spray (to prevent sticking)

Instructions

  1. In a small bowl, combine soy sauce, 3/4 cup chicken broth, sugar, and 2 teaspoons cornstarch. Whisk until the cornstarch is fully dissolved. Set aside.
  2. Heat a nonstick skillet or wok over medium-high heat and lightly spray with cooking spray. Add the chicken pieces along with garlic and ginger, stir-frying for 2-3 minutes until the chicken is browned on all sides.
  3. Pour the prepared soy sauce mixture over the browned chicken. Stir to coat the chicken evenly. Reduce the heat to low, cover the skillet, and let it simmer for 5 minutes, stirring halfway through.
  4. Add the broccoli florets, stirring to coat them in the sauce. Cover and cook for another 5 minutes, or until the broccoli is tender-crisp, stirring occasionally.
  5. In a small bowl, mix the remaining 1/4 cup chicken broth with the remaining cornstarch to form a slurry. Pour the slurry into the skillet, stirring continuously until the sauce thickens, about 1-2 minutes.
  6. Remove the skillet from the heat and serve the Chicken and Broccoli Stir Fry over steamed rice or noodles.
