Chicken Bacon Ranch Gnocchi

Creamy one-pan chicken bacon ranch gnocchi features tender pillows of gnocchi, juicy chicken, crispy bacon, and a flavorful ranch sauce for the ultimate comfort food dinner.

  • 6 slices bacon, cut into small pieces
  • 2 medium chicken breasts (about 1 lb), cut into bite-size pieces
  • 1 large clove garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 2 tablespoons dry ranch seasoning mix
  • 1 pound uncooked potato gnocchi
  • 1/2 cup freshly grated parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large skillet, fry the bacon until crispy. Remove bacon from the pan, leaving a little fat behind.
  2. Add the diced chicken to the pan and cook until white on the outside, stirring often. Add the minced garlic and stir for 30 seconds.
  3. Reduce heat to medium. Add chicken broth, heavy cream, ranch seasoning, gnocchi, and most of the cooked bacon. Stir well, cover, and cook for 4-5 minutes.
  4. Uncover and continue cooking for a few more minutes until the sauce thickens, stirring occasionally. Stir in parmesan cheese, season with salt and pepper, and top with remaining bacon. Serve immediately.

Notes

Use uncooked gnocchi directly in the sauce for best texture. Reserve some bacon for topping to keep it crispy. For extra cheesiness, add 1 cup shredded Monterey Jack cheese with the parmesan.
