Brie Grilled Cheese with Apple and Honey

A gooey, golden brie grilled cheese layered with crisp apple slices and a drizzle of sweet honey.

Ingredients

  • 4 slices sourdough or country bread
  • 6 ounces brie cheese, thinly sliced (rind on or off, your choice)
  • 1 small crisp apple (such as Honeycrisp or Gala), thinly sliced
  • 2 tablespoons honey, plus more for drizzling
  • 3 tablespoons unsalted butter, softened
  • 1/4 teaspoon ground cinnamon (optional)
  • Pinch of flaky sea salt

Instructions

  1. Lay out the 4 slices of bread and butter one side of each slice.
  2. Flip two slices so the buttered side faces down, then layer with brie slices, apple slices, a drizzle of honey, and a pinch of cinnamon if using.
  3. Top with the remaining bread slices, buttered side facing up.
  4. Heat a large skillet or griddle over medium-low heat.
  5. Place the sandwiches in the skillet and cook for 3 to 4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the brie is fully melted.
  6. Remove from heat, let rest for 1 minute, then slice in half.
  7. Drizzle with extra honey and a pinch of flaky sea salt before serving.

Notes

For extra crunch, toast the apple slices in the skillet for 1 minute before assembling. Swap honey for maple syrup or fig jam for a different flavor twist. Leftover brie grilled cheese reheats best in a skillet, not the microwave, to keep the bread crisp.
