Flaky, buttery turnovers filled with sweet blackberry jam and a hint of lemon zest.

For the Crust:
- 2 cups fresh blackberries
- 1/4 cup granulated sugar
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1 tbsp cornstarch
- 1 package (17.3 oz) frozen puff pastry, thawed
- 1 egg, beaten (for egg wash)
- 1 tbsp turbinado sugar (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a saucepan, combine blackberries, granulated sugar, lemon juice, lemon zest, and cornstarch. Cook over medium heat for 5-7 minutes until thickened. Let cool slightly.
- Roll out puff pastry sheets and cut into 4 equal squares per sheet. Spoon blackberry filling onto one half of each square, leaving a border.
- Fold pastry over filling to form triangles. Seal edges with a fork and brush tops with beaten egg. Sprinkle with turbinado sugar if desired.
- Bake for 18-20 minutes until golden brown. Let cool slightly before serving.
