For the Crust:
2 cups fresh blackberries
1/4 cup granulated sugar
1 tbsp lemon juice
1 tsp lemon zest
1 tbsp cornstarch
1 package (17.3 oz) frozen puff pastry, thawed
1 egg, beaten (for egg wash)
1 tbsp turbinado sugar (optional)
Instructions
1. Prepare the Crust:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a saucepan, combine blackberries, granulated sugar, lemon juice, lemon zest, and cornstarch. Cook over medium heat for 5-7 minutes until thickened. Let cool slightly.
Roll out puff pastry sheets and cut into 4 equal squares per sheet. Spoon blackberry filling onto one half of each square, leaving a border.
Fold pastry over filling to form triangles. Seal edges with a fork and brush tops with beaten egg. Sprinkle with turbinado sugar if desired.
Bake for 18-20 minutes until golden brown. Let cool slightly before serving.
