Warm Black-Eyed Pea Dip Recipe

A warm, cheesy black-eyed pea dip built on peas cooked down with bacon and onion instead of blended straight from the can.

Ingredients

Scale
  • 2 (15-ounce) cans black-eyed peas, drained and rinsed
  • 4 slices bacon, chopped
  • 1/2 cup diced yellow onion
  • 2 cloves garlic, minced
  • 1 jalapeño, seeded and diced
  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup shredded sharp cheddar, divided
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon lime juice
  • Salt and black pepper, to taste
  • 2 tablespoons sliced green onion, for topping

Instructions

  1. Preheat the oven to 350°F and grease a small (1 to 1.5 quart) baking dish.
  2. Cook the bacon in a skillet over medium heat until crisp, about 6 to 7 minutes. Remove the bacon with a slotted spoon and set aside, leaving about 1 tablespoon of fat in the pan.
  3. Add the onion to the fat and cook until soft, 4 to 5 minutes. Add the garlic and jalapeño and cook 1 minute more, until fragrant.
  4. Add the black-eyed peas, cumin, and smoked paprika to the skillet. Cook 4 to 5 minutes, mashing some of the peas against the pan with the back of a spoon, until the peas smell nutty rather than tinny.
  5. Transfer the mixture to a food processor with the cream cheese, sour cream, and lime juice. Pulse 10 to 12 times, scraping down the sides once, until mostly smooth with some pea halves still visible. Season with salt and pepper.
  6. Stir in half the cheddar and half the bacon by hand. Spread the mixture into the baking dish and top with the remaining cheddar.
  7. Bake 20 to 25 minutes, until bubbly and golden at the edges. For extra char, broil 1 to 2 minutes, watching closely.
  8. Top with the remaining bacon and the green onion. Serve warm.

Notes

Use freshly shredded cheddar instead of the pre-shredded bag kind; it melts smoother and won’t leave the dip gritty. If you’re feeding a bigger crowd, double everything and bake it in a 9×13 dish, checking for bubbly edges, since a wider dish can bake in about the same time.
