Banana PB&J Tiramisu Jars (No-Bake Peanut Butter Jelly Tiramisu)

No-bake peanut butter jelly tiramisu jars layered with banana, jelly-brushed ladyfingers, and whipped peanut butter mascarpone cream.

  • 24 ladyfinger cookies (savoiardi)
  • 3/4 cup grape jelly
  • 2 tbsp hot water
  • 3 ripe bananas, sliced
  • 1 tbsp lemon juice
  • 8 oz mascarpone cheese, softened
  • 1/2 cup creamy peanut butter
  • 1/3 cup powdered sugar
  • 1 cup heavy cream, cold
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1/3 cup roasted peanuts, chopped, for topping
  • 2 tbsp extra grape jelly, for swirling

Instructions

  1. In a large bowl, whisk mascarpone, peanut butter, powdered sugar, vanilla, and salt until smooth and lump-free.
  2. In a separate bowl, whip the cold heavy cream to stiff peaks. Fold into the peanut butter mascarpone mixture in two additions, keeping it light and airy.
  3. Warm the grape jelly with the hot water, stirring until thin and brushable. Let cool slightly.
  4. Toss banana slices with lemon juice to keep them from browning.
  5. Break ladyfingers to fit six half-pint jars. Lightly brush both sides of each piece with warmed jelly — do not dunk.
  6. Layer jelly-brushed ladyfinger pieces, banana slices, and peanut butter cream in each jar. Repeat for a second layer.
  7. Top with a final layer of peanut butter cream and swirl in a spoonful of jelly.
  8. Cover and chill at least 4 hours, or overnight for the best texture.
  9. Top with chopped peanuts just before serving.

Notes

Warm the jelly just until pourable, not hot — hot jelly will melt the cream layer on contact. If your jelly is very stiff, add water 1 teaspoon at a time rather than all at once. Jars keep well covered in the fridge for up to 3 days, though the peanuts are best added right before serving to stay crunchy. Freeze-dried banana chips, crumbled, make a good stand-in for fresh banana if you want a longer shelf life.
