Bacon Cheeseburger Tortellini

A hearty and flavorful dish that combines the classic flavors of a bacon cheeseburger with cheesy tortellini for a comforting one-pot meal.

  • 1 pound ground beef
  • 6 slices bacon, cooked and chopped
  • ½ yellow onion, diced
  • 1 tablespoon minced garlic
  • 14.5-ounce can petite diced tomatoes, drained
  • ½ cup heavy whipping cream
  • 3 cups cheddar cheese, divided
  • 12 ounces cheese tortellini, cooked and drained

Instructions

  1. In a large skillet, cook the ground beef over medium heat until no longer pink, breaking it apart as it cooks.
  2. Remove the cooked beef and set aside, draining excess grease from the skillet.
  3. In the same skillet, sauté the diced onion for 2-3 minutes, then add the minced garlic and cook for another 30-45 seconds until fragrant.
  4. Return the cooked beef to the skillet. Add the heavy whipping cream, 2 cups of cheddar cheese, chopped bacon, and drained diced tomatoes. Stir to combine.
  5. Reduce heat to low and simmer, stirring until the cheese is melted and the mixture is well blended.
  6. Add the cooked tortellini and stir to combine.
  7. Sprinkle the remaining 1 cup of cheese on top, cover, and simmer on low until the cheese is melted.
  8. Remove from heat and let cool for 10 minutes before serving.

Notes

For extra flavor, use freshly grated cheddar cheese. Substitute spinach or cherry tomatoes for added vegetables. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
