Zucchini Cookies

Soft, cake-like cookies with shredded zucchini, warm spices, and a hint of sweetness.

For the Crust:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup shredded zucchini, drained
  • 1/2 cup raisins or chocolate chips (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla.
  4. Stir in shredded zucchini, then gradually mix in dry ingredients. Fold in raisins or chocolate chips if using.
  5. Drop rounded tablespoons of dough onto prepared sheets. Bake for 10-12 minutes until edges are lightly golden. Cool on wire racks.

Notes

You can customize the seasonings to taste.
