For the Crust:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup shredded zucchini, drained
- 1/2 cup raisins or chocolate chips (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla.
- Stir in shredded zucchini, then gradually mix in dry ingredients. Fold in raisins or chocolate chips if using.
- Drop rounded tablespoons of dough onto prepared sheets. Bake for 10-12 minutes until edges are lightly golden. Cool on wire racks.
