For the Crust:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup grated zucchini, drained
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla.
  4. Stir in grated zucchini, then gradually mix in dry ingredients. Fold in raisins and walnuts.
  5. Drop rounded tablespoons of dough onto prepared sheets. Bake for 12-15 minutes until edges are golden. Cool on wire racks.
