For the Crust:
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 2 tablespoons lemon zest
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- Additional powdered sugar for dusting
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter and powdered sugar until light and fluffy.
- Mix in lemon zest, lemon juice, and vanilla extract until well combined.
- In a separate bowl, whisk together flour, cornstarch, and salt. Gradually add to butter mixture, mixing until just combined.
- Roll dough into 1-inch balls and place on prepared baking sheets, spacing about 2 inches apart.
- Bake for 12-14 minutes until bottoms are lightly golden. Cool on baking sheets for 5 minutes, then transfer to wire racks.
- While still slightly warm, dust cookies generously with powdered sugar.
