For the Crust:
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- Additional powdered sugar for dusting
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together butter and powdered sugar until light and fluffy. Mix in lemon zest, lemon juice, and vanilla extract.
- In a separate bowl, whisk together flour, cornstarch, and salt. Gradually add to butter mixture, mixing until just combined.
- Roll dough into 1-inch balls and place 2 inches apart on prepared baking sheets. Bake for 10-12 minutes until bottoms are lightly golden.
- Cool cookies on baking sheet for 5 minutes, then transfer to wire rack. Dust generously with powdered sugar while still warm.
