Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 8 oz white chocolate, melted and slightly cooled
  • 1/2 cup sour cream
  • 1/4 cup heavy cream

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Combine graham cracker crumbs and melted butter in a bowl; press mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth and creamy.
  4. Add eggs one at a time, beating well after each addition.
  5. Mix in vanilla extract.
  6. Slowly add melted white chocolate, mixing until fully incorporated.
  7. Blend in sour cream and heavy cream until the batter is smooth.
  8. Pour batter over the crust in the springform pan.
  9. Bake for 50-60 minutes or until the center is almost set but still slightly jiggly.
  10. Turn off oven and leave cheesecake inside with the door slightly open for 1 hour.
  11. Remove cheesecake from oven and chill in refrigerator for at least 4 hours or overnight before serving.

Notes

For best results, use high-quality white chocolate and allow it to cool slightly before mixing to avoid curdling. Chilling overnight enhances the texture and flavor. Serve chilled for a smooth, creamy experience.
