Village Style Spicy Chicken Curry

A traditional village style chicken curry made with simple spices, mustard oil, and slow-cooked for rich flavor and tender meat.

  • 700g Desi chicken pieces
  • 1 tsp Turmeric powder
  • 1 tsp Salt
  • 1 tsp Kasuri methi
  • 1 tsp Garam masala
  • 1 tsp Mustard oil (for marination)
  • 3 tbsp Mustard oil (for cooking)
  • 3 Bay leaves
  • 1 inch Cinnamon piece
  • 4 Cloves
  • 1 Black cardamom
  • 2 Green cardamom
  • 1 tsp Coriander seeds
  • 1 tsp Cumin seeds
  • 5 Dry chilies
  • 15 Garlic cloves
  • 1 inch Ginger, peeled
  • 200g Onion, chopped
  • 1 tsp Kashmiri red chili powder
  • ½ tsp Turmeric powder (for gravy)
  • ½ tbsp Salt (for gravy)
  • 2 Slit green chilies
  • ¼ cup Coriander leaves (for garnishing)
  • Water as needed

Instructions

  1. Marinate the chicken with turmeric powder, salt, kasuri methi, garam masala, and 1 tsp mustard oil. Set aside for 1 hour.
  2. Dry roast bay leaves, cinnamon, cloves, black cardamom, green cardamom, coriander seeds, cumin seeds, and dry chilies on low heat for 2 minutes. Remove and cool.
  3. Grind the roasted spices along with garlic cloves, ginger, and fresh grated coconut to a paste by adding ½ cup water.
  4. Heat mustard oil in a pan. Add slit green chilies and bay leaves, stir, then add chopped onion. Fry until translucent (about 5 minutes).
  5. Add the prepared spice and coconut paste. Mix well and fry on medium heat for 2 minutes, add a pinch of salt, then fry on low heat for another 5 minutes.
  6. Add marinated chicken and fry on medium heat for 3 minutes, then continue to fry on low heat for 5-7 minutes until oil separates.
  7. Add 200 ml water, mix well, cover, and cook on low heat for around 20 minutes or until chicken is tender.
  8. Garnish with chopped coriander leaves and serve hot with rice or roti.

Notes

For authentic village flavor, use mustard oil and cook the chicken slowly until oil separates from the gravy. Adjust spice levels according to preference. Cooking in an earthen pot enhances flavor but is optional.
