  • 3 cups powdered sugar
  • 2 tbsp espresso or strong brewed coffee
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a medium bowl, whisk together flour, baking powder, chai tea powder, cinnamon, ginger, cloves, nutmeg, and salt.
  3. In a large bowl, cream the butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Mix in vanilla extract.
  6. Alternately add the dry ingredients and milk to the butter mixture, beginning and ending with dry ingredients. Mix until just combined.
  7. Fold in pumpkin puree gently.
  8. Divide batter evenly among cupcake liners, filling about 2/3 full.
  9. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow cupcakes to cool completely before frosting.
  11. For the frosting, beat butter until creamy.
  12. Gradually add powdered sugar, mixing well.
  13. Add espresso, vanilla extract, and salt; beat until light and fluffy.
  14. Pipe or spread frosting onto cooled cupcakes.
