Tuscan Creamy Spinach Ravioli

A quick and creamy Tuscan-inspired ravioli dish featuring sun-dried tomatoes, spinach, garlic, and a rich cream sauce. Perfect for a comforting weeknight meal.

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1/2 cup chicken or vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon lemon juice
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 pound refrigerated cheese ravioli
  • 1 cup (packed) fresh baby spinach
  • Fresh basil, optional
  • Salt and pepper, to taste
  • Freshly grated parmesan cheese, optional

Instructions

  1. Add olive oil and butter to a large skillet over medium heat. Once melted, add minced garlic and cook until fragrant.
  2. Stir in the broth, heavy cream, lemon juice, sun-dried tomatoes, and ravioli. Let the mixture gently bubble, then cover and simmer until the ravioli is nearly done.
  3. Once the sauce has thickened to your liking, stir in the spinach and basil (if using). Cover again and let the spinach wilt for 1-2 minutes.
  4. Season with salt and pepper as needed. Top with parmesan cheese if desired and serve immediately.

Notes

For a richer flavor, use freshly grated parmesan. If you prefer a thicker sauce, simmer uncovered for an extra minute or two. This dish is best served fresh and can be customized with additional herbs or vegetables.
