Creamy Tuscan Chicken Skillet

A rich and creamy skillet dish featuring chicken, spinach, sun-dried tomatoes, and parmesan cheese in a luxurious sauce.

  • 4 (6-ounce) boneless skinless chicken breasts
  • 1 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 3 tablespoons extra virgin olive oil
  • 4 garlic cloves, minced
  • ¼ cup finely chopped yellow onion
  • ½ cup sun-dried tomatoes, thinly sliced
  • 2 cups baby spinach
  • 1 ½ cups heavy cream
  • ¼ cup freshly grated parmesan

Instructions

  1. Season both sides of each chicken breast with Italian seasoning, salt, and pepper.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chicken and sear for 3 to 4 minutes on each side, until golden. Remove the chicken from the pan and set aside.
  3. In the same skillet, add another tablespoon of oil and sauté the onion until softened, about 2 to 3 minutes.
  4. Add the garlic and sun-dried tomatoes to the skillet and sauté for another minute, until fragrant.
  5. Add the spinach and sauté until it begins to wilt.
  6. Add the heavy cream and parmesan cheese to the skillet. Stir to combine and bring to a simmer.
  7. Return the chicken to the skillet and cook until heated through, about 5 to 7 minutes.

Notes

Serve with bread, rice, pasta, or mashed potatoes to soak up the creamy sauce. This dish is best served fresh, but leftovers can be refrigerated for up to 3 days.
