Turkey Tetrazzini

A classic comfort food dish made with leftover turkey, pasta, and a creamy sauce, perfect for using up Thanksgiving leftovers.

  • 1 pound spaghetti
  • 2 cups cooked turkey, diced
  • 2 tablespoons butter
  • 1 cup mushrooms, sliced
  • 1 cup celery soup
  • 1/2 cup sour cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 8 ounces egg noodles (optional for variation)

Instructions

  1. Preheat the oven to 375°F.
  2. Cook the spaghetti or egg noodles according to package instructions until al dente, then drain.
  3. In a large skillet, melt butter over medium heat. Add sliced mushrooms and cook until tender.
  4. In a large mixing bowl, combine cooked noodles, diced turkey, mushroom mixture, celery soup, sour cream, Parmesan cheese, and thyme. Mix well.
  5. Transfer the mixture to a 9×13-inch baking dish.
  6. Top with additional Parmesan cheese if desired.
  7. Bake for about 25-30 minutes or until the top is lightly browned and the casserole is heated through.

Notes

This recipe is a versatile way to use leftover turkey. Consider adding sautéed onions or garlic for extra flavor. For a creamier sauce, use more sour cream or add some heavy cream.
