Turkey Sweet Potato Soup with Rice

A hearty and filling soup featuring ground turkey, sweet potatoes, and rice, perfect for cold nights and easy to prepare in about 35 minutes.

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 2 medium sweet potatoes, peeled and cut into chunks
  • 1/2 cup uncooked rice
  • 6 cups chicken broth

Instructions

  1. Heat the olive oil in a large stock pot over medium-high heat. When hot, add the ground turkey and cook for 3 to 4 minutes, stirring frequently and breaking up the meat into smaller chunks until browned.
  2. Add the chopped onion, kosher salt, black pepper, paprika, coriander, and cumin. Cook for an additional 2 to 3 minutes until the onions are softened.
  3. Stir in the sweet potato chunks and rice, cooking for 1 minute.
  4. Pour in the chicken broth and bring the mixture to a boil over high heat.
  5. Reduce heat to maintain a gentle boil, partially cover the pot, and simmer for 15 minutes or until the rice is cooked and sweet potatoes are tender. Add additional broth if needed during cooking.

Notes

This soup is gluten-free and can be adjusted with additional spices to taste. Stir occasionally to prevent sticking and add broth if the soup thickens too much during cooking.
