Turkey Sloppy Joes

A healthier version of sloppy joes made with lean ground turkey and a homemade sauce that’s lighter in sugar but rich in flavor.

  • 1 tablespoon olive oil
  • 1 medium white onion, diced
  • 1 medium red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 pound ground turkey (94% lean)
  • 1/2 cup ketchup
  • 1/4 cup low-sugar BBQ sauce
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon red wine vinegar
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 teaspoon cayenne pepper
  • 4 whole grain hamburger buns
  • Shredded pepper jack cheese (optional)
  • Jalapeño slices (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and cook until translucent, about 5 minutes.
  2. Add the diced red bell pepper and cook for another 3 minutes, until tender.
  3. Add the minced garlic and cook for 1 minute, until fragrant.
  4. Add the ground turkey to the skillet, breaking it up with a spoon as it cooks. Cook until the turkey is browned, about 5-7 minutes.
  5. Stir in the ketchup, BBQ sauce, Worcestershire sauce, red wine vinegar, yellow mustard, salt, black pepper, and cayenne pepper (if using). Bring the mixture to a simmer.
  6. Reduce heat to low and let the sloppy joes simmer for about 10-15 minutes, stirring occasionally, until the flavors have melded together and the sauce has thickened slightly.
  7. Serve the sloppy joes on whole grain hamburger buns with shredded pepper jack cheese and jalapeño slices, if desired.

Notes

This recipe can also be made in a slow cooker. Simply brown the turkey in a skillet, then transfer everything to the slow cooker and cook on low for 6 hours or high for 2-3 hours.
