Turkey Sausage Pasta

A hearty, flavorful pasta dish featuring lean turkey sausage, fresh vegetables, and a light tomato sauce. Quick to prepare and perfect for a weeknight dinner.

  • 1 pound Italian turkey sausage, casings removed
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 (28-ounce) can crushed tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 12 ounces penne pasta
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves, for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Cook the penne according to package directions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the turkey sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5–7 minutes.
  3. Add the onion, garlic, and red bell pepper to the skillet. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  4. Stir in the crushed tomatoes, basil, oregano, red pepper flakes (if using), salt, and black pepper. Bring to a simmer and cook for 10–15 minutes, until the sauce thickens slightly.
  5. Add the cooked pasta to the skillet and toss to combine. Sprinkle with Parmesan cheese and garnish with fresh basil before serving.

Notes

For extra flavor, use spicy Italian turkey sausage. This dish can be made ahead and reheated—just add a splash of water when reheating to loosen the sauce. Feel free to add spinach or mushrooms for more vegetables.
