Classic Tomato Soup

A rich and creamy tomato soup made from fresh tomatoes, onions, garlic, and herbs, perfect for a comforting meal.

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh tomatoes, chopped
  • 2 cups vegetable broth
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup heavy cream
  • Fresh basil leaves for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Add chopped tomatoes, vegetable broth, sugar, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Use an immersion blender to puree the soup until smooth.
  7. Stir in heavy cream and heat through without boiling.
  8. Serve hot, garnished with fresh basil leaves.

Notes

For a smoother texture, strain the soup through a fine mesh sieve after blending. Adjust seasoning to taste and add a pinch of red pepper flakes for a spicy kick.
