Tomato Chutney

A tangy and spicy tomato chutney made with ripe tomatoes and aromatic spices, perfect as a condiment for snacks and meals.

Ingredients

  • 4 large ripe tomatoes, chopped
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch piece ginger, grated
  • 2 green chilies, chopped
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon sugar
  • Salt to taste
  • 2 tablespoons oil
  • 1 tablespoon vinegar
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds and let them splutter.
  2. Add chopped onions, garlic, and ginger. Sauté until onions turn golden brown.
  3. Add green chilies, turmeric powder, red chili powder, and stir well.
  4. Add the chopped tomatoes and salt. Cook for 15-20 minutes until tomatoes soften and oil separates.
  5. Add sugar and vinegar, stir well and cook for another 5 minutes.
  6. Turn off the heat and let the chutney cool.
  7. Garnish with fresh coriander leaves before serving.

Notes

This chutney can be stored in the refrigerator for up to one week. Adjust chili quantity according to your spice preference. Vinegar adds a tangy flavor and also acts as a preservative.
