For the Crust:
- 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 cup white rice, uncooked
- 2 cups chicken broth
- 1/2 cup soy sauce
- 1/4 cup honey
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tbsp cornstarch
- 1 tbsp water
- 1 cup broccoli florets
- 1/2 cup shredded carrots
- 1 tbsp sesame seeds (optional)
- 2 green onions, sliced (for garnish)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- In a medium bowl, whisk together soy sauce, honey, garlic, ginger, cornstarch, and water to make the teriyaki sauce.
- Place chicken pieces, rice, broccoli, and carrots in a 9×13-inch baking dish. Pour teriyaki sauce and chicken broth over the mixture and stir to combine.
- Cover tightly with foil and bake for 30 minutes.
- Remove foil, stir, and bake uncovered for another 10-15 minutes until rice is tender and chicken is cooked through.
- Garnish with sesame seeds and green onions before serving.
