For the Crust:

  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup white rice, uncooked
  • 2 cups chicken broth
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp cornstarch
  • 1 tbsp water
  • 1 cup broccoli florets
  • 1/2 cup shredded carrots
  • 1 tbsp sesame seeds (optional)
  • 2 green onions, sliced (for garnish)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. In a medium bowl, whisk together soy sauce, honey, garlic, ginger, cornstarch, and water to make the teriyaki sauce.
  3. Place chicken pieces, rice, broccoli, and carrots in a 9×13-inch baking dish. Pour teriyaki sauce and chicken broth over the mixture and stir to combine.
  4. Cover tightly with foil and bake for 30 minutes.
  5. Remove foil, stir, and bake uncovered for another 10-15 minutes until rice is tender and chicken is cooked through.
  6. Garnish with sesame seeds and green onions before serving.

Notes

You can customize the seasonings to taste.
