Taco Soup

A hearty and flavorful soup combining ground beef, beans, corn, and taco seasoning, perfect for a quick and comforting meal.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can corn, drained
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (10-ounce) can diced tomatoes with green chilies
  • 1 (1-ounce) package taco seasoning mix
  • 1 (1-ounce) package ranch dressing mix
  • 2 cups beef broth

Instructions

  1. In a large pot, cook ground beef and chopped onion over medium heat until beef is browned and onion is tender; drain excess fat.
  2. Add black beans, kidney beans, corn, diced tomatoes, diced tomatoes with green chilies, taco seasoning, ranch dressing mix, and beef broth to the pot.
  3. Stir well to combine all ingredients.
  4. Bring the soup to a boil, then reduce heat and simmer uncovered for 20 minutes, stirring occasionally.
  5. Serve hot, optionally topped with shredded cheese, sour cream, or tortilla chips.

Notes

For a spicier soup, add a diced jalapeño or a dash of hot sauce. Leftovers taste even better the next day as flavors meld. This soup freezes well for up to 3 months.
