Taco Lasagna

Description

A delicious fusion of tacos and lasagna, layered with seasoned ground beef, cheese, and tortillas.


Ingredients

For the Crust:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 6 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup chopped green onions

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Stir in taco seasoning and water. Simmer for 5 minutes.
  4. Add black beans, corn, and diced tomatoes. Cook for another 5 minutes.
  5. In a 9×13-inch baking dish, layer 2 tortillas, half of the meat mixture, 1/3 of the cheese, and 1/3 of the sour cream. Repeat layers.
  6. Top with remaining tortillas, cheese, and sour cream.
  7. Bake for 20-25 minutes until cheese is melted and bubbly.
  8. Garnish with chopped green onions before serving.

Notes

You can customize the seasonings to taste.
