Sweet Potato Soup

A creamy and comforting sweet potato soup made with simple ingredients, perfect for a cozy meal.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups peeled and diced sweet potatoes
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Add diced sweet potatoes, vegetable broth, cumin, and cinnamon to the pot.
  5. Bring to a boil, then reduce heat and simmer until sweet potatoes are tender, about 20 minutes.
  6. Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
  7. Stir in coconut milk and season with salt and pepper to taste.
  8. Heat through for another 5 minutes, then serve garnished with fresh cilantro if desired.

Notes

For a richer flavor, roast the sweet potatoes before adding them to the soup. Adjust the thickness by adding more broth or coconut milk as needed.
