For the Crust:
- 1 cup chopped pecans
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a bowl, whisk together flour, baking powder, and salt. Set aside.
- In a separate bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
- Alternately add the flour mixture and milk to the butter mixture, beginning and ending with the flour mixture. Fold in chopped pecans.
- Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
