Swedish Meatball Noodle Bake

A comforting casserole that combines savory Swedish meatballs, creamy sauce, and tender egg noodles, baked to perfection for a hearty family meal.

  • 1 lb ground beef
  • 1 lb ground pork
  • 1/2 cup panko breadcrumbs
  • 1 onion, diced
  • 2 large egg yolks
  • 1/2 teaspoon allspice
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup unsalted butter
  • 1/3 cup all-purpose flour
  • 4 cups beef broth
  • 3/4 cup sour cream
  • 1/4 teaspoon salt (for sauce)
  • 1/4 teaspoon pepper (for sauce)
  • 12 oz package wide egg noodles, cooked

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat 1 tablespoon olive oil over medium heat. Cook diced onion until soft, about 5 minutes. Remove from heat and let cool.
  3. In a large bowl, combine ground beef, ground pork, panko, cooled onion, egg yolks, allspice, nutmeg, salt, and pepper. Mix well and form into 1 1/2-inch meatballs.
  4. Add another tablespoon of oil to the skillet and brown meatballs on all sides. Remove and set aside on a paper towel-lined plate.
  5. In the same skillet, melt butter over medium heat. Whisk in flour to form a paste. Gradually whisk in beef broth and bring to a simmer. Stir in sour cream, salt, and pepper until smooth.
  6. In a large baking dish, combine cooked egg noodles, meatballs, and sauce. Gently mix to coat everything evenly.
  7. Bake uncovered for 20–25 minutes, until bubbly and lightly browned on top.

Notes

For extra flavor, consider adding a splash of Worcestershire sauce to the meatball mixture. Leftovers reheat well and can be frozen for future meals. Serve with lingonberry jam or pickled cucumbers for an authentic Swedish touch.
