For the Crust:

  • 4 cups mashed potatoes (cooled)
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon (crumbled)
  • 2 eggs
  • 1/4 cup breadcrumbs
  • 1/4 cup green onions (chopped)
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a muffin tin with olive oil.
  2. In a large bowl, mix mashed potatoes, 1/2 cup cheddar cheese, breadcrumbs, garlic powder, salt, and pepper.
  3. Press the potato mixture into the muffin tin cups, forming nests with a well in the center.
  4. Bake for 20 minutes or until edges are golden and crispy.
  5. In a separate bowl, mix remaining cheese, bacon, and green onions. Fill each nest with the mixture.
  6. Return to oven for 5-7 minutes until cheese is melted. Let cool slightly before serving.

Notes
