For the Crust:
- 4 cups mashed potatoes (cooled)
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon (crumbled)
- 2 eggs
- 1/4 cup breadcrumbs
- 1/4 cup green onions (chopped)
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease a muffin tin with olive oil.
- In a large bowl, mix mashed potatoes, 1/2 cup cheddar cheese, breadcrumbs, garlic powder, salt, and pepper.
- Press the potato mixture into the muffin tin cups, forming nests with a well in the center.
- Bake for 20 minutes or until edges are golden and crispy.
- In a separate bowl, mix remaining cheese, bacon, and green onions. Fill each nest with the mixture.
- Return to oven for 5-7 minutes until cheese is melted. Let cool slightly before serving.
