Stuffed Mashed Potato Nests

Crispy mashed potato nests filled with a savory cheese and bacon mixture, perfect as an appetizer or side dish.


Ingredients

For the Crust:

  • 4 large russet potatoes, peeled and cubed
  • 1/4 cup milk
  • 2 tablespoons butter
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked bacon, crumbled
  • 2 green onions, finely chopped
  • 1 egg, beaten
  • Salt and pepper to taste
  • Cooking spray

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Grease a muffin tin with cooking spray.
  2. Boil potatoes until tender, about 15 minutes. Drain and mash with milk, butter, salt, and pepper until smooth.
  3. Mix in cheese, bacon, and green onions. Stir in beaten egg until well combined.
  4. Spoon mixture into muffin cups, pressing down in the center to form nests.
  5. Bake for 20-25 minutes until edges are golden and crispy. Let cool slightly before removing from tin.

Notes

You can customize the seasonings to taste.
