Street Style Masala Macaroni

A spicy and flavorful Indian street-style macaroni pasta cooked with a blend of vegetables and masalas, perfect as a quick snack or meal.

  • 1.25 cups elbow macaroni
  • 2 cups water (for boiling macaroni)
  • 1/2 teaspoon salt (for boiling macaroni)
  • 1/4 teaspoon oil (for boiling macaroni)
  • 1 teaspoon oil (for cooking)
  • 2 garlic cloves, chopped
  • 1 green chili, chopped
  • 1 onion, sliced
  • 1/2 cup cabbage, chopped
  • 1 carrot, grated
  • 1/8 teaspoon salt
  • Pinch of turmeric powder
  • 1/8 teaspoon chili powder
  • 1/8 teaspoon garam masala
  • 1/2 tablespoon tomato ketchup
  • 1/4 teaspoon chaat masala
  • 1/2 teaspoon pepper powder
  • Chopped coriander leaves for garnish

Instructions

  1. Bring 2 cups of water to boil with 1/2 teaspoon salt and 1/4 teaspoon oil.
  2. Add 1.25 cups macaroni and cook for 8-10 minutes until soft but not mushy.
  3. Drain the macaroni and rinse with cold water to stop cooking; set aside.
  4. Heat 1 teaspoon oil in a pan, sauté chopped garlic and green chili until fragrant.
  5. Add sliced onion and cook until soft and translucent.
  6. Add chopped cabbage and grated carrot; cook for 2 minutes.
  7. Mix in 1/8 teaspoon salt, pinch of turmeric, chili powder, garam masala, and tomato ketchup; stir well.
  8. Add the boiled macaroni to the masala mixture and toss thoroughly to coat the pasta evenly.
  9. Sprinkle chaat masala, pepper powder, and chopped coriander leaves; mix well.
  10. Serve hot as a street-style spicy macaroni snack or meal.

Notes

Ensure the macaroni is cooked al dente to avoid mushy texture. Adjust green chili and chili powder as per spice preference. Adding fresh coriander at the end boosts flavor and freshness.
