A fruity twist on the classic Italian dessert, featuring layers of ladyfingers, fresh strawberries, and creamy mascarpone.

For the Crust:
- 1 lb fresh strawberries, hulled and sliced
- 24 ladyfinger cookies
- 1 1/2 cups mascarpone cheese
- 1 cup heavy whipping cream
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 cup strawberry juice or syrup
- 1 tbsp lemon juice
Instructions
1. Prepare the Crust:
- In a bowl, mix sliced strawberries with lemon juice and 2 tbsp sugar. Set aside to macerate for 15 minutes.
- Whip the heavy cream with remaining sugar and vanilla until stiff peaks form. Fold in mascarpone cheese.
- Dip ladyfingers briefly in strawberry juice and layer in a dish. Top with half the cream mixture, then half the strawberries.
- Repeat layers, ending with cream. Garnish with reserved strawberry slices.
- Refrigerate for at least 4 hours before serving.
