Strawberry Crumb Bars

Buttery crumb bars with a sweet strawberry filling and crunchy oat topping.

For the Crust:

  • 2 cups all-purpose flour
  • 1 cup old-fashioned oats
  • 1 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 2 cups fresh strawberries, diced
  • 1/4 cup cornstarch
  • 2 tablespoons lemon juice
  • 1/4 cup brown sugar

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, mix flour, oats, granulated sugar, baking soda, and salt. Cut in cold butter until mixture resembles coarse crumbs.
  3. Press half of the crumb mixture into the bottom of the prepared pan to form the crust.
  4. In another bowl, combine strawberries, cornstarch, lemon juice, and brown sugar. Spread evenly over the crust.
  5. Sprinkle the remaining crumb mixture over the strawberry layer. Bake for 30-35 minutes or until golden brown.
  6. Allow to cool completely before cutting into bars.

Notes

You can customize the seasonings to taste.
