For the Crust:

  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 zucchini, sliced into rounds
  • 1/4 cup olive oil
  • 2 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, whisk together olive oil, soy sauce, garlic, oregano, smoked paprika, salt, and pepper.
  2. Add steak cubes to the marinade and toss to coat. Let marinate for at least 30 minutes, or up to 4 hours.
  3. Preheat grill to medium-high heat.
  4. Thread steak and vegetables alternately onto skewers.
  5. Grill kabobs for 8-10 minutes, turning occasionally, until steak is cooked to desired doneness and vegetables are tender.
  6. Serve immediately.
