For the Crust:
- 1 pre-made pie crust
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 5 cups fresh spinach, chopped
- 4 large eggs
- 1 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1 cup shredded Gruyère cheese
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Roll out the pie crust and press it into a 9-inch pie dish. Trim the edges and prick the bottom with a fork.
- In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened, about 3 minutes.
- Add spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- In a bowl, whisk together eggs, heavy cream, salt, pepper, and nutmeg.
- Spread the spinach mixture evenly over the pie crust. Sprinkle shredded cheese on top.
- Pour the egg mixture over the spinach and cheese. Bake for 30-35 minutes, or until the center is set and the top is golden brown.
- Let cool for 5-10 minutes before slicing and serving.
