Spicy Tortellini Soup

A hearty and spicy tortellini soup featuring Italian sausage, tomatoes, and fresh spinach, perfect for a comforting meal with a kick.

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon crushed red pepper flakes
  • 4 cups chicken broth
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 (9-ounce) package refrigerated cheese tortellini
  • 2 cups fresh spinach, chopped
  • Salt and freshly ground black pepper, to taste
  • Grated Parmesan cheese, for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add Italian sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes.
  3. Add chopped onion and cook until softened, about 3-4 minutes.
  4. Stir in minced garlic and crushed red pepper flakes; cook for 1 minute until fragrant.
  5. Pour in chicken broth and diced tomatoes with their juice; bring to a boil.
  6. Add tortellini and cook according to package instructions, usually 3-5 minutes, until tender.
  7. Stir in chopped spinach and cook until wilted, about 2 minutes.
  8. Season with salt and pepper to taste.
  9. Serve hot topped with grated Parmesan cheese.

Notes

For extra heat, increase the crushed red pepper flakes or add a dash of hot sauce. Using fresh tortellini ensures a tender texture, but frozen can be substituted. Leftovers reheat well and flavors deepen overnight.
