Spiced Salmon with Cheesy Asparagus & Garlic Herb Potatoes

A delightful dish combining spiced salmon fillets, cheesy asparagus spears topped with cream cheese and cheddar, and garlic herb baby potatoes, baked for rich flavors and vibrant colors.[1]

  • 4 salmon fillets
  • 2 tbsp olive oil (divided)
  • 1 tsp paprika
  • 1 tsp garlic powder (divided)
  • 1 tsp onion powder
  • 1 tsp salt (divided)
  • 1/2 tsp black pepper
  • 1 bunch asparagus spears (trimmed)
  • 4 oz cream cheese (softened)
  • 1 cup grated cheddar cheese
  • 1.5 lbs baby potatoes (halved)
  • 3 garlic cloves (minced)
  • 1 tsp dried parsley

Instructions

  1. Preheat oven to 400°F (200°C). In a bowl, mix 1 tbsp olive oil, paprika, 1/2 tsp garlic powder, onion powder, 1/2 tsp salt, and black pepper. Brush over salmon fillets and set aside.[1]
  2. Mix cream cheese, cheddar cheese, remaining 1/2 tsp garlic powder, and 1/4 tsp salt. Spread over asparagus spears and place on a baking sheet.[1]
  3. Toss halved baby potatoes with 1 tbsp olive oil, minced garlic, dried parsley, and 1/4 tsp salt. Arrange on another baking sheet.[1]
  4. Bake all on separate sheets or together if space allows: salmon 12-15 minutes until flaky, asparagus 10-12 minutes until tender, potatoes 25 minutes flipping halfway until golden.[1]

Notes

Use fresh salmon for best texture; check potatoes for doneness to avoid overcooking. For extra crispiness, broil for 1-2 minutes at the end. Pairs well with a lemon wedge squeeze.[1]
