A delicious spiced apple fritter bread featuring cinnamon and ginger-spiced apples folded into a moist batter, topped with extra apple chunks and a sweet vanilla glaze—perfect for fall.

Ingredients

Scale
  • 2 medium baking apples, chopped
  • 1/2 cup light brown sugar
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 large egg
  • 1/3 cup white granulated sugar
  • 1/4 cup vegetable oil
  • 1/4 cup full-fat sour cream
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • 1 cup powdered sugar
  • 1 tsp vanilla extract (for glaze)
  • 3 tbsp milk

Instructions

  1. Preheat oven to 350°F. Prepare a loaf pan with nonstick spray or cake release.
  2. In a medium bowl, mix chopped apples, brown sugar, cinnamon, and ginger. Set aside.
  3. In a large bowl, whisk together egg, granulated sugar, vegetable oil, sour cream, and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking soda, and kosher salt. Add to wet ingredients and mix until almost combined.
  5. Fold in 3/4 of the apple-cinnamon mixture into the batter.
  6. Pour batter into prepared loaf pan and top with remaining apple mixture.
  7. Bake for 50-55 minutes or until internal temperature reaches 200°F.
  8. Cool in pan for at least 30 minutes before serving.
  9. For glaze, whisk powdered sugar, vanilla extract, and milk until smooth. Adjust consistency with more powdered sugar if needed.
  10. Drizzle glaze over cooled bread before serving.

Notes

Use firm baking apples for best texture. Allow the bread to cool completely before glazing to prevent the glaze from melting. This bread is delicious served at room temperature or slightly warmed.
